PETER “SEEN PER” CHAN
BACKGROUND
As soon as the ship docked in Durban they left for Johannesburg. Peter started out in a Chinese family butchery and life was mere routine …waking up at 04h00 in the morning and working till 12h00 at night …. 7 days a week. After 3 months, he quit his job and moved to China Town. He found a job as an apprentice chef in the old Cantonese Community Country Club and Restaurant in Johannesburg. His mentors were a group of experienced Chinese Chefs who taught him all the cooking styles and they helped him to develop and refine his skills. After 3 years of training he managed to get a job as a chef at the Hong Kong Restaurant in downtown Johannesburg and worked there for 5 years. In 1972 Peter was appointed to Head Chef at the Ming Saan Chinese Restaurant. It was here that he met his wife and married in 1977.
Peter has been an Asian Chef for nearly half a century!
Asian Cuisine is unique because of the skill and discipline required in order to enhance the end product that ultimately separates a meal from Cuisine.
In 1975 Peter established his first Chinese Restaurant, named Formosa Inn and shortly thereafter opened the Pung Ching Chinese Restaurant on the corner of Kruis and Market Street in Johannesburg. He sold the two businesses and assisted his wife, Jeanne with her African Eating house in Johannesburg.
In 1982, after some research, he opened the first Chinese and Japanese Restaurant, named Pagoda Gardens on the corner of Jan Smuts and Bompass Avenue in the Dunked West Shopping Centre where he focused on training people in Asian Cuisine.
Pagoda Gardens was the first Chinese Restaurant to cater under the Beth Din for a Kosher Chinese Dinner at the Jewish Guild in Sandton. Peter and his wife, Jeanne, were given Life Long Membership to the Jewish Guild for their contribution towards fundraising for the Jewish Guild Benevolent Fund.
Peter was also the first Chinese Chef to cater for a Jewish Bar Mitzvah.
The Chan’s eventually owned 5 Chinese and Japanese restaurants throughout Johannesburg, where he professionally trained 4 Chinese Chefs and 50 Blacks as restaurant assistants. The training was focused on Chinese cuisines, preparation and presentation.
Peter assisted the renowned Mr. Billy Gallagher from Southern Sun with bringing the first Thai Chefs, Rodger and Sovaluk, who worked in the Elangeni Hotel, Durban.
Peter sourced many Chefs and food specialists from various Asian countries! Most of these chefs have settled in South Africa contributing to the economy. Furthermore, Peter was personally responsible for training many previously disadvantaged South African’s in the cuisine and culture of Asian foods.
In on of many testimonials, Mr. Bill GALLAGHER, Southern Sun Hotels Group Food and Beverage Director had this to say about Peter CHAN:
“Peter worked long hours and overtime was part of Peter’s everyday shift. He took initiative to ensure that all operating procedures and policies were adhered to. Peter is an extremely patient person as well as extremely helpful and a very friendly individual who is extremely loyal and could always be counted on. Peter is a hard working person who assisted others wherever possible. I found him to use his own initiative, to be honest and ….”
Peter and Jeanne CHAN currently reside in George, Western Cape, South Africa, where they both contribute to the upliftment of the local community.
